1 Pork Roast (Butt roast is best)
2 cans Mexican style tomato sauce (I have only been able to find this @ Maceys)
3 cans tomato sauce
1 cup brown sugar
4 cloves of garlic-minced
Cook roast in crock pot or oven (I prefer the crock pot). When done, shred meat and combine with other ingredients. Salt and pepper meat to your liking.
Heat and serve in a salad or burrito
Salad-- Rice (Spanish or long grain)

tortilla cruchy strips
salsa

Ham Cups
2 tubes of Pillsbury rolls
1 sq cream cheese
1 can diced green chillies
1 1/2 C shredded cheese ( I use colby jack)
1 1/2 C cubed cubed ham
1 can olives
sourcream
*** You will need about 2 or 3 muffin tins****
Filling:
Mix the cream cheese, chillies, ham and the cheese in a bowl.
Spray the bottom of your muffin tins.
You are going to put the rolls in the tins so they have a dent in the center push some of the dough up the sides ( like a pie)
Spoon the filling in the cups
Bake at 375 for 10 -15 min
Spoon sour cream and chopped olives on top
